Hello everyone! I hope your having an amazing day. I wanted to share with you an easy recipe, a so called “set it and forget it” way of creating a delicious dinner full of flavor. The only ingredients are the ones shown in the picture above 🔝. Not many, right?
Prep time: 10-15 min/ Cook time: 4-5 hours on high, or 6-8 hours on low.
- 1.5- 2lbs Boneless Skinless Chicken Breasts
- ½ lb. fresh green beans, trimmed (about 2.5 cups)
- 1.25 lb. diced red potatoes- I use about 5-6
- ⅓ cup FRESH lemon juice
- ¼ cup olive oil
- 1 tsp. dried oregano
- 1 tsp. salt
- ¼ tsp. pepper
- ¼ tsp. onion powder
- 2 tsp minced garlic
Take your potatoes and clean them thoroughly with warm water, dirt is never a pleasant thing to find in your dinner. I have a weird hack, which you can use or not use, but I use an apple slicer to cut up the potatoes, easier. Creates the perfect shape to then trim them down into “cubes”.
Next, take your green beans, I use fresh, but if your absolutely in a hurry you can used canned and drain them well. They even have already trimmed green beans at the grocery store, so If you want to be lazy, that’s your option. Here, I cleaned the green beans well, and trimmed them.
Next your going to take your chicken breast, and trim off the fat and skin. Unless your like me, and buy it that way (so I only have to cut off very little amounts of fat). Cut chicken breast into strips, and throw everything in the crockpot!
Next, I use a brush to make sure the chicken is well coated first, but after, just spread over veggies and chicken evenly.
And the finished product…..!
